Description: Homemade sourdough starter created from best Italian Manitoba and wholemeal wheat flours. No fancy stories about its age and origin :) I made it myself around 7 months ago, feeding it daily. It is very active and produces spectacular loafs, with crispy crunch and tender crumb. Can be used for many recipes like bread, buns, baguettes, ciabatas, pizzas and others. How to use:Put the dehydrated starter in a half liter jar, add 50 ml of lukewarm water (25-28C) and 50 grams of flour. The best is 50/50 bread and wholemeal flours mix. Mix all ingredients to achieave a solid mass. Let it rest in warm place for 4-6 sometimes 8 hours unil it doubles in size. When it starts to collapse repeat: 50 grams of water, 50 grams of flours, mix, let it rest and ferment. Once it doubles or even triples in size its ready to use. If you are not planing to bake today, remove half of the starter from the jar. You can use the removed half for another jar of starter or simply discard. Put the jar or jars in a fridge and use when you plan to bake. If you are not planing to bake for longer time, remove the jar from the fridge and feed your starter once a week as described above. Once the starter is in top activity put it back to the fridge.
