Description: This is a genuine Sabatier knife from Thiers-Issard, a manufacturer in Thiers France. These are classic high-quality forged chef's knives. The design has been proven over centuries. This specific knife was the personal knife of a chef of a New York City restaurant that closed in the 70s. I acquired it from his daughter who related the stories of her dad sharpening his chef knives. I would assume that the knife is 50 years old or so. Although you can tell it has a few decades, the edge is perfect and so is the profile. I will hand-sharpen it on Japanese stones before I send it to you.
