Creamy Chestnut Soup Ingredients 1 teaspoon vegetable oil2 cups diced onion3/4 cup diced carrot1/2 cup diced celery1 1/2 tsp thyme1 (5.2-ounce) bag Gefen Chestnuts5 cups vegetable stock (or chicken stock)Salt & Pepper to taste1/3 cup heavy cream (optional) This simple recipe is perfect for cold nights and very easy to make. Start by sauteing onions, carrots and celery in the oil till soft. While vegetables are sauteing, warm stock. in a blender, combine sauteed vegetables, warm stock, Gefen Chestnus and thyme. Blend till smooth, return to pot, season with salt and pepper add cream (optional) and simmer for 10 min. Glazed Chestnuts Ingredients 6 tablespoons butter (or margarine)1/2 cup brown sugar1/2 teaspoon salt1 1/2 teaspoons vanilla extract3 tablespoons sugar2 (5.2-ounce) packages Gefen Chestnuts In a saucepan over low heat, combine butter, sugar, salt and vanilla. Stir till sugar is dissolved, being careful not to burn. Remove from heat and pour over chestnuts, stirring to coat. Spread evenly on a baking sheet coated with parchment paper.
