The entire plant may be harvested, or individual leaves may be cut from the plant. The leaves have are high in vitamins A and C as well as being a good source of iron. Harvest the white flowers with dark veins as they appear. Arugula leaves give a sharp, spicy, peppery taste, similar to a mild horseradish but with a green & earthy twist.
