Description: Bishop Cap pepper AKA bishop's crown, Christmas bell, or joker's hat, is a pepper, a cultivar of the species Capsicum baccatum var. pendulum, named for its distinct, three-sided shape resembling a bishop's crown. ... The flesh inside each pepper is thin, yet crisp. Medium hot Scoville scale: 5,000-30,000 SHU.This pepper tolerates cool weather better than most (almost as much cool weather as the Manzano pepper). They are mildly hot although they look very hot-like it's similarly looking Scotch Bonnet. This thin fleshed pepper starts off green and matures a nice scarlet red when mature. It is a fairly long 120 days till colored peppers. It will grow for years if allowed to not be frosted. They yield a hundred fruits or more on a mature bush and will come back year after year if protected. It's a wonderful pepper! They’re roomy, and that opens up the door to many fun (and delicious) stuffed pepper recipes. In most cases, where a jalapeño pepper can be used for stuffing, a bishop’s crown can be substituted. Just be careful with over-stuffing as the walls are much thinner than a jalapeño.
