Its knives or knife sharpeners are comfortable, sturdy and well-balanced, making them easy to use. This knife has the blade fabricated from the high carbon steel designed to take a finer edge and hold it longer providing sharp cutting satisfaction. The handle is triple riveted over the full tang to good fitting for durability, strength, and balance. The Chicago high-carbon stainless steel knives have properties of stainless steel in that they resist rust, spots or stains, yet like carbon steel they hold a very sharp edge and are easy to re-sharpen. This knife is the most versatile of all knives. Use for cutting most vegetables and fruits into chunks, julienne strips, bias cut, dicing, or even slicing. ** CHICAGO CUTLERY 44S --- ca. 1970s - 1980s *** Blade Length 10" Total Length 16" Weight 6 - 8 oz.
